The spirit of the iconic Beatrice Inn lives on at Restaurant Le B. - a new chapter from the same cult legacy that once defined New York’s underground dining scene. Tucked behind a discreet black storefront in a corner townhouse, this is where luxury, opulence, and warm hospitality take center stage. A burger worthy of the distinction “The Birkin of Burgers” lives here - served in limited quantity, with only nine available each night.

  • The Burger: Le Burger (Tier 1). Forty-five-day dry-aged Angus blend, fromager d’affinois, cabernet. A showstopper in every sense, Le Burger arrives alone on a plate - no distractions, just the burger presented with reverence. Like a fine steak, it’s cooked low and slow to a chef-recommended medium rare, taking about 25 minutes to prepare.  The result is a precise, even cook throughout, with a thin, almost lacquered exterior char and an unbelievably tender, beautifully pink interior. Cabernet-braised onions bring a delicate sweetness, while the Fromager d’Affinois, a silky smooth triple-cream-style cheese, is thoughtfully added to complement the richness with a creamy texture that lets the meat’s flavor shine. The bun is a textbook example of proper brioche - firm outside, airy inside, delivering perfect texture and mouthfeel. Everything comes together to create an experience where each bite melts in your mouth - decadent, salty, and perfectly balanced. A pile of super-thin shoestring fries evokes memories of the iconic Spotted Pig version, adding a familiar, nostalgic touch.

  • Pro Tip: Le Burger is exclusively available at the bar on a first-come, first-served basis. With only nine served per night, make sure to snag an early reservation or be ready to line up when the doors open. When it comes to enjoying the burger, you can opt to eat it whole or cut it in half (it does come with a steak knife, after all). But whatever you do, don’t even think about using ketchup - doing so should be a crime punishable by law.

  • The Occasion & Vibe: At The Counter. It’s a bar-only burger, but this is far from typical bar seating. The space is an experience in itself - mirrored shelves, gold accents, and glowing backlighting frame a flurry of cocktail-making that feels like theater. A crystal chandelier anchors the room, adding to the sense of occasion. Attentive, tuxedo-clad staff provide warm, precise service, while Chef Angie Mar floats through the space, greeting guests and keeping a watchful eye on every detail. For a final nod to the past, the iconic Beatrice Inn sign hangs proudly in its new home.

  • The Location: West Village, West 12th & West 4th Streets.
